Cauliflower without the cheese

More unusual things to do with a cauliflower!

My son like cauliflower cheese (he also likes macaroni cheese of all things but that's another story!) so I thought I'd see if I could encourage him to eat cauliflower the way I like it (curried). I also had some salmon tonight so I searched for some recipes combining the two. I didn't find any but that's what we ate and it worked well. He liked and even had the salmon (didn't like it the last time but I'd poached it in some of the juice from the 'curry' - oh and squeezed half a lemon in at the last minute again. Mmm.)

But I see that cauliflower 'puree' is popular with salmon - cook it up in milk and double cream and whizz it to a cream then place your fish on top. I'm not attracted to it and anyway all that dairy is not on the menu at all.

Another recipe required slicing the cauliflower into fine slices eg by using a mandoline then saute in butter - a bit like cauliflower crisps!

All new ones on me.

I cooked the salmon like the Sea Bass (as advised by Parisien blogger chef) - in very hot oil for 30 seconds then turn over and reduce the heat. After a few minutes I transferred it to another frying pan, away from all that oil, and simmered it in stock for the rest of the cooking time.

Meanwhile, the cauliflower and sweet potato curry is prepared : sweet onion, red onion, garlic, ginger, garam masala powder, chilli powder, green thai paste, half tin of tomatoes, some leftover veggie stock, tin of organic coconut milk - one sweet potato and one cauliflower plus parsley.

I'm having the leftovers for breakfast!!
