For the last three days, I've been eating a warming vegetable curry/soup made with some extra nice ingredients, sometimes with tomato added to redden and deepen the sauce and always with red onion and garlic and coconut milk.
Not just any old tomatoes from a tin but Tesco Finest peeled San Marzano tomatoes of Agro Sarnese Nocerino area - in rich tomato juice AND Green Curry Inuima paste (garlic, green chilli, onion, lemon grass, salt, black galangal, galangal, kaffir lime peel, fennel seed, coriander, fennel - authentically Thai, or so it says!) with Marigold bouillon.
Yesterday I added a little chopped up chicken to the mix with lots of different onions (leek, sweet, red) plus savoy cabbage; this evening I had carrots and green beans; the other day I majored on cauliflower. It works well with all of them!!
Frankly, I could live on vegetables mixed up flavoursomely like this every day. When hubby made the Sunday roast, I loved the veggies and often would have been as happy (happier!) with just the delicious veggies...
