Stuffed red peppers

Yes, I know it's simple but never was before! Nearly bought ready-stuffed but realised they were filled with nothing I could eat. So I bought a fine red pepper, cut it in half, added olive oil and used my new SolarDom to oven cook for 30 minutes. Meanwhile cooked up some quinoa (with red onion, garlic, parsley and sliced chestnut mushrooms) to stuff it with. Yum. Had it with some lovely lamb from the Farm Shop.
